The BEST Einkorn Gingerbread Cookies: An Easy, Healthy Cookie Recipe! (Plus a Book Review)

I’m sure you’ll agree: baking with modern wheat can have disastrous effects for some people!

Well, I’ve been wondering about einkorn flour for a long time, like five years to be exact, but haven’t been brave enough to try it out.

When I read the book, Wheat Belly, a few years ago, one of the things I gleaned from it was how bad modern wheat and gluten are for us and our guts (microbiome). Einkorn wheat happens to be the original wheat from Biblical times! Because it hasn’t been hybridized, it is much better for our health.

Do you know what that means? I can eat cookies!!! I can eat bread! I can bake again! And it’s likely you can too! I’ve been anxious, yet a little nervous, to try baking with einkorn flour because I’ve heard it acts differently in recipes than regular flour does.

So, when the publishers of Shaye Elliott’s new book, Seasons at the Farm, sent me a copy for review, I just had to try her recipe for gingerbread cookies made with einkorn flour!

I was surprised at how easy this recipe was, and the cookies turned out FABULOUSLY. I was very impressed, because I’ll be honest: baking ain’t really my thang, my friend! I mean…I wish it was…but it’s not, to poor Mr. V.’s constant consternation.

You see, like many folks these days, we don’t eat gluten. And that means….no flour or other products made from wheat.

But because of this incredibly delicious and simple recipe, I am once again inspired to bake using einkorn flour.

Here is the recipe for you, but first, I want to tell you about Shaye Elliott’s latest book: Seasons at the Farm (which I think everyone needs on their coffee table). After all, this is where I came by this most excellent gingerbread cookie recipe!

Seasons at the Farm: A Book Review

I admit. I was thrilled when I was chosen to review Shaye Elliott’s latest book, Seasons at the Farm. I’ve purchased ALL her other books, and they are not only inspirational, but packed with relevant and useful information. Seasons at the Farm is no different.

However, there are some important distinctions between this latest book by Shaye Elliott and her others.

Do you love beautiful rustic home decor that is practical, yet livable? Do you love tasty from scratch recipes that aren’t even hard to make? Do you love excellent gardening advice? Or chicken-raising know-how? How to create a beautiful and comfortable home in all the seasons of the year? How about the MOST drool-worthy photos ever?

All of these topics are written with each season of the year in mind.

Shaye Elliott of The Elliott Homestead has written a fabulous collection of year-round celebrations for all the areas of your home and life.

She discusses how she lovingly guides her family through the seasons, in these areas: The garden, special recipes for each season, home decor for each season (can you say, “hygge”?), and tips for seasonal celebrations.

It’s just perfect.

I don’t say this lightly. Like most homesteaders are, I live a life on the edge of overwhelm, with many, many different projects going on all the time. Sometimes, life just feels frantic. Are you this way too?

Well, Seasons at the Farm makes you want to slow down. In this latest book, Shaye Elliott gently reminds us to slow down and take time for what’s really important. Family. Home. And Beauty.

Oh…..beauty.

Because of reading this book, I am newly convicted to pay more attention to BEAUTY in my home, garden, even my chicken coop.

As you walk through the delightful pages of her book, you will be gently reminded that you CAN attend to a pretty home, a potager garden, obtain warmth and soul…and even some most excellent food….all while being busy.

I got a real sense from her book that yes, I can do this too! And….I need to.

Seasons at the Farm is a book you will want to keep out on your coffee table all year round. Or in the kitchen. Or both!

The pictures are gorgeous, and I tell you, I have loved sitting down in my comfy chair (for a change) with a cup of tea, taking time to relax and peruse the book.

This is a book you can read cover to cover; just the section for the season you’re in; or any time you need a lovely and simple seasonal idea that works for your home any time.

It’s incredibly fun just to sit with, flip through, and dream about making your home the way Shaye shows us we can do. With the tips she gives, I tell you, you will be inspired like I was!

Usually I try to provide some type of area for improvement when I write book reviews. However, there really isn’t one for this book. I love it all, cover to cover!

If you need a gift for a great friend in any season of the year, I think this book (and maybe some lovely loose leaf tea) would make the perfect gift for relaxing with. Or, heck! Get one for a gift for yourself. It’s a visual, inspirational delight!!

How to Make Einkorn Gingerbread Cookies

These cookies are so perfect for winter. You see, ginger is a warming and stimulating herb. When these healthy cookies are paired up with a cup of tea or your morning coffee, you have a winning combination! This cookie recipe is so easy too.

Seriously. If I can do it….anyone can!

But wait! I’ll be right back! (I had to go get one of those cookies to munch on while I write this up for you! :-) They are THAT good.

Ingredients for Gingerbread Cookies Made with Einkorn Flour:

*** 6 cups all-purpose einkorn flour

*** 1 1/2 teaspoons salt

*** 1 teaspoon baking soda

*** 1 cup butter, melted

*** 1 cup molasses

*** 1 cup dehydrated whole cane sugar (I just used organic sugar)

*** 2 tablespoons freshly ground ginger (I used dried ginger powder, and I like a lot of ginger)

*** 2 teaspoons cinnamon

*** 2 eggs

Directions for Making Einkorn Gingerbread Cookies:

Step 1) Sift together your dry ingredients (flour, salt & baking soda)

Step 2) In a separate bowl, stir together the butter, molasses, sugar, spices, and eggs.

Step 3) Add the mixtures together, and fold with a spatula or wooden spoon (what I used) until combined. (I messed up this part, as my butter was not fully melted. I ended up having to knead the dough a bit to get everything mixed in. I know this is not ideal for baking, BUT the cookies turned out fabulously anyway.)

Step 4) Divide the dough in half and shape each half into a disc. Wrap them each in parchment paper (or plastic wrap—but I’m trying to avoid plastics) and keep in the fridge for 30 minutes or so.

Step 5) Preheat your oven to 350 degrees F while the dough is chilling. Once the dough is stiff, roll it out until it’s about 1/4 inch thick. Cut your cookies out with a cookie cutter (in the book, they are heart shaped—too cute), and place on parchment paper on your cookie sheet.

Gather up the extra dough, reroll it out again, and cut more cookies.

Step 6) Bake the cookies for 12-15 minutes, until they are set. (I cooked mine for exactly 12 minutes. They turned out great, and I’m glad I didn’t cook them longer). Remove from the oven, and let them cool for around 10 minutes on the hot pan.

Step 7) Allow them to cool longer on a wire rack (I just left them on the parchment paper on the cool counter top). When completely cooled, enjoy!

That’s all there is to it! Delicious, healthy, einkorn gingerbread cookies!

Shaye’s book is a wonderful and welcome addition to my resource library in our home. For one, it’s just soo beautiful. It’s really difficult to stop looking at. In fact, it’s become one of my happy places when I need a little boost of inspiration!

Also, you need to realize that Shaye Elliott is a cook-from-scratch expert. Her recipes just plain work. Like this gingerbread cookie recipe using einkorn flour—-einkorn, I understand, can be a little tricky. And I had no problems with it at all. Perfect directions and a perfect recipe!

I’ll certainly be making these again, along with other recipes from the book as well.
